- 2 pound pork tenderloin
- 2 tablespoon olive oil
- 3 clove garlic minced
- 1 tablespoon herbes de provence
- 1 teaspoon paprika
- 1.5 pound baby potato halved
- 1 bell pepper red bell pepper diced
- 1 zucchini zucchini diced
- 1 yellow squash yellow squash diced
- 1 eggplant eggplant diced
- 1 onion onion diced
- 4 tomato tomato diced
- 2 tablespoon balsamic vinegar
- clove fresh basil for garnish

1. Preheat the oven to 400°F (200°C).
2. In a small bowl, mix together 1 tbsp olive oil, garlic, herbes de Provence, paprika, salt, and pepper. Rub the pork tenderloins with the mixture and let them sit while you prepare the vegetables.
3. Place the halved potatoes on a baking sheet and drizzle with 1 tbsp olive oil. Season with salt and pepper and toss to coat. Roast in the oven for 30-35 minutes, or until tender and golden.
4. While the potatoes are roasting, prepare the ratatouille. In a large skillet, heat 1 tbsp olive oil over medium heat. Add the onion and cook until softened. Add the bell pepper, zucchini, yellow squash, and eggplant. Cook until the vegetables are tender.
5. Stir in the diced tomatoes and balsamic vinegar. Simmer for 10-15 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
6. Heat a grill or grill pan over medium-high heat. Grill the pork tenderloins for about 4-5 minutes per side, or until the internal temperature reaches 145°F (63°C). Let the pork rest for 5 minutes before slicing.
