I'd like to a big thank you to my friend Alex and Priscila who taught me this great recipe.Winter is cold, I do not prefer to eat salad for wintertime, but this grilled vegetable recipe is perfect. It is very flavorful and tasty. This recipe is friendly for vegan, vegetarian also Keto diet.

Ingredients
1 Zucchini
1 Endive small size
2 Eggplants small size
3 King oyster mushrooms
Balsamic vinaigrette
50 ml Balsamic Vinegar
20 ml Extra Virgin Olive Oil
Tyme leaves
Salt
Black Pepper
Instructions
1. Cut each king oyster mushroom into four pieces.
2. Cut the zucchini diagonally.
3. Cut each eggplant into six pieces.
4. Cut the endive into six pieces.
5. Heat a cast-iron pan over high heat until a wisp of smoke rises from the pan.
6. Grill the vegetables until tender and their surfaces get slightly burned.
7. Place the grilled vegetables on a large deep plate.
8. To make the balsamic vinaigrette, mix the balsamic vinegar, extra virgin olive oil, thyme leaves, salt, and black pepper in a small mixing bowl.
9. Pour the vinaigrette over the grilled vegetables.
10. Let the vegetables and dressing sit for 5 minutes to allow the vegetables to absorb the flavors. Serve.
